Summer may be ending, but that doesn’t mean you need to give up its fresh flavors just yet! In fact, you can take advantage of delicious vegetables that are still in season—like eggplant and tomatoes—to offer your family a healthy and deliciously easy dinner this September!
To make a nutrient-packed, tasty dinner with very little work on your end, try this easy ratatouille! You’ll need:
- 1 thinly sliced eggplant
- 8 chopped tomatoes
- 2 peeled and thinly sliced onions
- 2 peeled and thinly sliced cloves of garlic
- 1 thinly sliced zucchini
- 2 sliced green peppers
- 2 sprigs of rosemary
- 3 sprigs of thyme
- 2 tablespoons of olive oil
- Salt and pepper
Preheat your oven to 350 degrees F.
In a large baking dish, toss the eggplant, tomatoes, onions, garlic, zucchini, peppers, rosemary, and thyme together, leaving the full sprigs in one piece. Drizzle the olive oil over this mixture, and sprinkle with salt and pepper. Cover with foil, and bake for 45 minutes.
Take off the foil, and bake until the veggies turn golden brown (about 30 minutes). Serve with rice, pasta, chicken, or whatever else your family loves! As a bonus, this ratatouille will keep for a few days in the fridge, so you can use it as a side dish, topping for tacos, and more.
